Road Trip Ready: Healthy Eating Tips for Your Eclipse Adventure!

As we gear up for our exciting bike trip to witness the eclipse, it’s essential to prioritize our health and well-being. After all, feeling good is key to enjoying every moment of our adventure! So, let’s talk about how we can maintain a healthy diet while on the road and avoid blowing our “feel-good” vibes.
Planning ahead is our secret weapon. By preparing our menu in advance, we can ensure that we have nutritious and delicious meals ready to fuel our bodies throughout the trip. Here are some healthy meal ideas to keep us energized and feeling great:
Day 1:
Breakfast: Coffee with yummy protein in it.
Lunch: Salad bag mix with a side of protein.
Dinner: Grilled chicken breast with steamed carrots.
We have a grill that will go with us. Andy is also known as the grill master. Well I call him that.
Day 2:
Breakfast: Coffee and protein.
Veggie omelette cooked in a skillet with mushrooms, bell peppers, and onions
Lunch: mixed greens, sliced rotisserie chicken, and hummus (costco chix will be bagged up)
Dinner: Baked salmon with roasted carrots and a side salad. Gril master Andy on the job.
Day 3:
Breakfast: Breakfast burritos. Andy will have them prepared before we go. Sure do love my handy Andy.
Lunch: Salad made with spinach leaves, shredded rotisserie chicken, cherry tomatoes, and a lemon-tahini dressing
Dinner: Stir-fried vegetables with, you guess it chicken! So much protein in chicken.
Day 4:
Breakfast: Coffee and protein.
Lunch: Tuna and salad I use those packets of tuna, Easy and lots of flavors to choose.
Dinner: Grilled chicken kebabs with bell peppers and onions, served with a side of mixed greens salad…
Now to remember not to forget to pack essential cooking utensils like spatulas, cooking oil, and of course, the skillet and eggs. With these handy tools, we can whip up these delicious meals wherever our van trip takes us.
It can be easy to make healthy eating a priority on this adventure, Feeling our best will make this trip even better. We will be full of good food as we experience of witnessing the eclipse together!
